Quartz is a man made product made of crushed quartzite & epoxy resins. It is very stain resistant, and very strong. It rates about a 6.5 on the Mohs scale of hardness. It is only cured to 90% so is has some flexibility. That is where it's strength comes from. It is capable of a 14 inch overhang unsupported. Quartz does not like heat, you cannot put crock pots, or any other hot items in the surface without protection. It also not a good idea to cut directly on the quarts as it can scratch.
Granite is a natural product quarried from the earth. Granite is extremely durable and rates 7-7.5 on the Mohs scale of hardness. Granite is not as stain resistant as Quartz, but can be sealed to protect it. Granite can only go up to a 10 inch overhang unsupported. Granite does perform much better with heat, it's rated to 550 degrees.
Quartzite is the hardest of the stones. It has a similar look to marble, but is harder than granite. It performs very similar to granite, as far as heat and staining. It's best if sealed. It rates at 7.5-8+ on the Mohs scale of hardness.
